Description
The Carnaroli rice grain is known as the "king of risotti". Carnaroli has the highest content of amylase amongst different rice varieties which makes the grain more compact, giving a good absorbtion with little loss of starch. This means the rice absorbs the flavour of the ingredietns and liquids and maintains a good hard texture as it is cooked and stirrred.
