Clear spring organic mikawa mirin is the secret ingredient in authentic Japanese cuisine and mikawa mirin. It is traditionally made using organically grown sweet rice and no added sweeteners. A little mirin enhances the flavour of marinades, vinaigrettes, tempura dips and noodle broths. It is produced by a traditional method of koji fermentation and careful ageing over 9 months.
